Roasted Brussel Sprout Salad

Ingredients

1 lb Brussel sprouts trimmed and cut in half
½ Red Onion cut into thick slices
5 Cloves of Garlic peeled
1 cup chopped Roasted Pepper
1 slice Deli Ham sliced about 1 inch thick, browned in skillet using non stick cooking spray
Salt and Pepper to taste
Enough oil to lightly grease pan

While sprouts are roasting prepare vinaigrette:

1 zest of lemon
Juice from 2 lemons
2 tablespoons of apple cider vinegar
¼ cup of honey
1/3 cup Extra Virgin Olive Oil
1 Tablespoon Dijon Mustard
Salt and pepper to taste
