Marinated Vegetables On Greens

Ingredients

  • DRESSING
  • 1/2 cup olive oil
  • 1/4 cup red-wine vinegar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground red pepper (cayenne)
  • 1 bunch leeks (about 3/4 pounds), root ends trimmed and tops cut so about 2 inches green remains
  • 3 bunches baby carrots (about 12 ounces), greens trimmed, scrubbed
  • 2 small zucchini and/ or yellow summer squash (about 10 ounces), cut in half crosswise, then lengthwise in sticks
  • 8 cups loosely packed mixed salad greens
  • Garnish: snipped chives
