- 1 bunch leeks (about 3/4 pounds), root ends trimmed and tops cut so about 2 inches green remains
- 3 bunches baby carrots (about 12 ounces), greens trimmed, scrubbed
- 2 small zucchini and/ or yellow summer squash (about 10 ounces), cut in half crosswise, then lengthwise in sticks
- 8 cups loosely packed mixed salad greens
- Garnish: snipped chives
