Bean & Hominy Potpie

Ingredients

  • 2 teaspoons extra-virgin olive oil
  • 1 large onion, thinly sliced (1 cup)
  • 3 cloves garlic, minced (1 tablespoon)
  • 2 jalapeño peppers, seeded and minced (3 tablespoons)
  • 1 tablespoon paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/4 teaspoon ground cinnamon
  • Pinch of ground cloves
  • 1 pound butternut squash, peeled, seeded and diced (3 cups)
  • 1 16-ounce can crushed tomatoes
  • 1 cup vegetable broth or reduced-sodium chicken broth
  • 1 15-ounce can pinto beans, rinsed
  • 1 15-ounce can yellow or white hominy, rinsed
  • Salt & freshly ground pepper to taste
  • Topping
  • 1 tablespoon extra-virgin olive oil
  • 1/4 teaspoon salt
  • 8 corn tortillas salt
  • 1/2 cup grated sharp Cheddar cheese
