Parmesan Shrimp Skewers

Ingredients

  • 2   anchovy fillets (optional)
  • 1/4 cup  grated Parmesan cheese
  • 2 tbs.  lemon juice
  • 2 tbs.  white-wine vinegar
  • 4 tsp.  Dijon mustard
  • 1 tsp.  Worcestershire sauce
  • 1/4 cup  extra-virgin olive oil
  •   Skewers:
  • 1 lb.  large shrimp (about 20) shelled and deveined
  • 2   each sweet red and yellow peppers, seeded and cut into 1-inch pieces
  •   Pinch salt
  •   Pinch black pepper
  • 2 tbs.  grated Parmesan cheese
  • 3 cups  cooked white rice
  •   Lemon wedges

Description

The Shrimp And Sweet Peppers Are Sprinkled With Parmesan Cheese Before Grilling. The Coating Develops A Toasty, Almost Nutty Taste That Goes Beautifully With The Sweet Shrimp.
