Ingredients

  • 5 teaspoons  extra-virgin olive oil, divided
  • 2   tangy-sweet apples, such as Braeburn, chopped
  • 2 cups  thinly sliced red cabbage
  • 1   small red onion, thinly sliced
  • 2 teaspoons  minced fresh thyme, or 1/2 teaspoon dried
  • 2 tablespoons  pure maple syrup
  • 1 tablespoon  cider vinegar
  • 4   1/2-inch-thick center-cut boneless pork loin chops, (about 1 pound), trimmed
  • 1/4 teaspoon  salt
  • 1/4 teaspoon  freshly ground pepper, plus more to taste
  • 1/3 cup  all-purpose flour
  • 1   large egg, lightly beaten
  • 2 tablespoons  Dijon mustard
  • 1 1/2 cups  panko breadcrumbs, (see Note)
