Ingredients

  • 2-1/2 pounds  pork country-style ribs, cut crosswise in half and cut into 1- to 2-rib portions
  • 1 tablespoon  cooking oil
  • 2   medium potatoes, sliced 1/2 inch thick
  • 2   medium carrots, sliced 1/4 inch thick
  • 1   medium onion, thinly sliced
  • 1 8-ounce  can sauerkraut, rinsed and drained
  • 1/2 cup  apple cider or apple juice
  • 2 teaspoons  caraway or fennel seed
  • 1/8 teaspoon  ground cloves
  • 1 tablespoon  all-purpose flour
  • 2 tablespoons  cold water
  • 1/2 of a   large apple, cored and thinly sliced
  •   Salt (optional)
  •   Pepper (optional)
  • 1 tablespoon  snipped fresh parsley
