  • 1/2 cup  butter
  • 1/2   chopped onion
  • 1 cup  chopped leeks
  • 2 cups  chopped celery
  • 10 cups  cubed white bread
  • 1 tablespoon  poultry seasoning
  • 1 tablespoon  finely chopped fresh sage
  • 2 tablespoon  finely chopped fresh parsley
  • 1 teaspoon  salt
  • dash  freshly ground black pepper
  • 1 1/2 to 1 3/4 cups  chicken stock
