  • 2   bay leaves
  • 2 cloves  garlic, halved
  • 4 sprigs  fresh thyme
  • 2 cups  chopped, peeled tomatoes
  • 1-1/2 cups  peeled sweet potatoes cut into 3/4-inch cubes
  • 1 cup  parsnips cut into 1/2-inch pieces
  • 1 cup  sliced carrot
  • 1 cup  sliced celery
  • 2 cups  fresh pea pods, halved crosswise
