Ingredients

  • 1-1/2 small  red potatoes with skins, cut into quarters (eighths if large)
  • 1/2 pound  green beans, halved crosswise
  • 1   sweet red pepper, cored, seeded and cut into 12 slices
  • 1 teaspoon  salt
  • 4   boneless, skinless chicken breast halves (1-1/4 pounds total)
  • 2 tablespoons  fresh lemon juice
  • 1/4 teaspoon  black pepper
  • 2 tablespoons  finely chopped fresh parsley
  • 6 cups  chopped romaine or leaf lettuce
