  • 3 medium  zucchini, cut diagonally into 1/4-inch-thick slices
  • 1   yellow squash, cut diagonally into 1/4-inch-thick slices
  • 1/4 cup plus 2 tablespoons  dried bread crumbs
  • 1/2 teaspoon  dried sage
  • 1 tablespoon  flour
  • 1-1/4 teaspoons  salt
  • 1/2 teaspoon  black pepper
  • 1 can (8.5 ounces)  artichoke hearts, drained
  • 1   scallion, trimmed and minced
  • 1-1/2 cups  shredded Swiss cheese
  • 3/4 cup  light cream
  • 1/2 pound  ground turkey
  • 2 tablespoons  grated Parmesan cheese
