Red-Eye Ham Steaks with Cheese Grits and Seared Chard

Ingredients

  • 3 tablespoons butter
  • 1 large ham steak (1 1/2 pounds)
  • 1/4 cup strong brewed coffee
  • 1/4 cup pure maple syrup
  • 3 tablespoons grainy mustard
  • 1-1/4 cups milk
  • 1/2 cup hominy grits
  • 1 cup shredded cheddar cheese
  • A few dashes hot pepper sauce
  • 1/2 teaspoon paprika
  • 1 tablespoon extra-virgin olive oil (EVOO)
  • 2 slices bacon, chopped
  • 1 small red onion, thinly sliced
  • 1 pound Swiss chard, stemmed and coarsely chopped
  • 2 tablespoons cider vinegar or red wine vinegar
  • 1 teaspoon sugar
  • Salt and pepper
