Roasted Chicken and Caramelized Onion Salad

Ingredients

  • 3 tablespoons chopped fresh parsley
  • 1 clove garlic, finely chopped
  • 1 tablespoon butter, softened
  • 1 large sprig fresh rosemary, leaves finely chopped
  • Salt and pepper
  • 2 pounds chicken drumsticks, patted dry
  • 1-1/2 teaspoons sherry vinegar or red wine vinegar
  • 1 teaspoon hot water
  • 1/2 teaspoon Dijon mustard
  • 2 tablespoons extra-virgin olive oil (EVOO)
  • 1/4 cup caramelized onions, plus 2 tablespoons, finely chopped (see recipe finder)
  • 4 cups torn frise (curly endive) or escarole
  • 2 cups arugula
