- 2 tablespoons butter
- 2 medium onions, chopped
- 1 bay leaf
- 2 cloves garlic, chopped
- 1 1/2 teaspoons ground or rubbed sage (half a palmful)
- 2 tablespoons all-purpose flour
- 1 1/2 cups beef stock
- 4 cups watercress, loosely packed
