Spicy Black-Eyed Peas with Grainy Mustard Collard Greens

Ingredients

Peas:
1/2 pound dried black-eyed peas
1 bay leaf
1 teaspoon dried oregano
1 jalapeno (preferably red), seeded and finely chopped
1 teaspoon minced garlic (about 1 clove)
2 scallions , finely chopped
3 tablespoons lemon juice (about 1 lemon)
2 tablespoons olive oil
Kosher salt and pepper , to taste

Greens:
2 slices bacon , chopped
1 onion , chopped
1 pound collard greens , sliced into 2-inch strips, tough ends removed
2 tablespoons red wine vinegar
1 tablespoon honey
2 tablespoons whole grain mustard
Kosher salt and pepper , to taste
