2 slices bacon , chopped
1 onion , chopped
1 pound collard greens , sliced into 2-inch strips, tough ends removed
2 tablespoons red wine vinegar
1 tablespoon honey
2 tablespoons whole grain mustard
Kosher salt and pepper , to taste
