Tortilla Soup

Ingredients

Tortilla Soup
1 dried ancho chili
1/2 cup boiling water
2 tablespoons olive oil
3 boneless skinless chicken thighs
Kosher salt and freshly ground black pepper , to taste
1 large onion , chopped (about 2 cups)
2 carrots , peeled and sliced into 1/2-inch coins
2 stalks celery , cut into 1/2-inch slices
3 cloves garlic , peeled and quartered
2 teaspoons ground cumin
6 cups chicken broth
2 cans (14.5 ounces each) chopped tomatoes
1/2 cup loosely packed cilantro leaves
6 corn tortillas
Vegetable oil , for frying

For garnish (all optional):
Sliced avocado
Crumbled queso fresco or shredded Cheddar or Monterey Jack cheese
Sour cream
Salsa
Lime wedges
Cilantro
