- 750g smoked ham hock
- 2 bay leaves
- 1 sprig fresh thyme
- Pinch dried chilli flakes (optional)
- 1½ cups lentils
- 10 cups chicken stock
- ¼ cup fresh coriander, chopped
- ¼ cup flat leaf parsley, chopped
- Flaked salt, to taste
- Freshly ground black pepper, to taste
- Additional stock or water if needed to thin the soup
