Seafood Lasagne

Ingredients

    9-12 Lasagne Noodles

    1-142g package fresh spinach, steamed and chopped (or 1 package frozen) (could use as much as 1lb)
    4 eggs, lightly beaten
    1 lb ricotta cheese (light is fine)
    1/2 tsp salt
    1/8 tsp pepper
    1/4 tsp nutmeg

    6 tbsp butter
    1 onion, chopped\
    2 cloves garlic, minced
    1 tbsp chopped dill (or 1 1/2 tsp dried)
    6 tbsp flour
    1/2 tsp salt
    1/8 tsp pepper
    3 tbsp sherry
    1 tbsp lemon juice
    2 cups whipping cream
    1 1/2 cups half and half cream
    1 1/2 - 2 cups grated cheese (swiss, havarti, mozzarella or a combination)
    1 package crab meat, chopped (or Alaska Polluck crab substitute) (227g)
    1/4 fillet cooked salmon
    200g cooked shrimp (30-40 small), chopped
    170g scallops (approx. 15), chopped

    1 cup shredded mozzarella cheese
    1/4 cup parmesan cheese
