  • 1 large onion, chopped (about 2 cups)
  • 1 jalapeo, seeded and minced
  • 1/4 cup apple juice
  • 1/3 cup currants
  • 1 cup fresh cranberries
  • 2 cups cut-up butternut squash (1 pound)
  • 1/2 teaspoon salt
  • 21/2 cups cooked brown rice
  • 1 cup finely chopped celery
  • 1/4 cup lightly toasted, chopped walnuts or pecans (optional)
