  • 1 cucumber, trimmed, halved lengthways, thinly sliced diagonally
  • 50g (1/3 cup) chopped roasted peanuts
  • Dressing

  • 2 tbs fish sauce
  • 2 tbs fresh lime juice
  • 1 tbs water
  • 1 1/2 tbs caster sugar
  • 1 garlic clove, finely chopped
