Ingredients

  • 3 Cups (500g) Sultanas
  • 2 1/4 Cups (375g) Raisins, chopped coarsely
  • 1 Cup (160g) dried Currants
  • 1 1/2 Cups (200g) dried Dates, seeded, chopped coarsely
  • 1/3 Cup (55g) Mixed Peel
  • 1/2 Cup (100g) Red Glace Cherries
  • 2/3 Cup (160ml) Crème De Cacao
  • 1/4 Cup (90g) Golden Syrup
  • 250g Butter, softened
  • 2 TSP Concentrated Vanilla Extract or Vanilla Bean Paste
  • 1 Cup (200g) Firmly packed Brown Sugar
  • 4 Eggs
  • 100g Dark eating Chocolate, grated
  • 2 1/4 Cups (335g) Plain Flour
  • 2 TSP Mixed Spice
  • 1/4 Cup (60ml) Crème De Cacao extra To Decorate
  • 1/4 Cup (55g) Caster Sugar
  • 1/4 Cup (60ml) Water
  • 500g Packet Soft Icing (Fondant) Pure Icing Sugar (Not icing sugar mixture)
  • White Sprinkles or Cachous
