Orzo and Sweet Pea Risotto

Ingredients

  • 1 pound orzo
  • 2 14.5-ounce cans chicken broth
  • 1 tablespoon olive oil
  • 1 cup snow peas, washed and ends removed
  • 2 green onions, chopped
  • 1 cup frozen peas, defrosted, or 1 cup fresh sweet peas, blanched
  • Juice of 1 lemon
  • 1⁄4 cup chopped fresh parsley
  • 1⁄2 cup grated Parmesan cheese
  • Salt and freshly ground black pepper, to taste
