New England Clam Chowder

Ingredients

  • 1/4 lb. salt pork (or bacon), diced
  • 1 med. onion, diced (about 1/2 c.)
  • 2 c. potatoes, peeled & cut into 1/2-inch cube
  • 2 c. Clam broth (use liquid drained from canned clams)
  • 1/2 tsp. salt
  • 1/4 tsp. ground black pepper
  • 2 c. whole milk, lt. cream, or half-and-half (better), or heavy cream (best)
  • 2 c. clams, drained and chopped fine (4 small cans)
  • 3 Tbsp. butter
