  • - sea salt & black pepper
  • - 4 thick (200g each) thick white fillets, cutlets or steaks
  • Steamed jasmine rice and lime wedges to serve
  • Cucumber and Avocado Salad:
  • - 3 Lebanese cumbers
  • - 1 just ripe avocado, halved lengthways, peeled, deseeded and sliced
  • - 2 green onions (shallots), thinly sliced
  • - 1 tablespoon extra virgin olive oil
  • - 1/4 cup unsalted roasted peanuts, chopped
  • - 2 tablespoons fried shallots (available from Asian supermarkets)
