- 1 tbsp honey
- 1 lemon, juice and grated zest only
- 5 tbsp creme fraiche
- 1 large cucumber, peeled and cut into thin strips
- 24 pitted green olives, finely sliced
- 1 tbsp capers
- 1 tbsp chopped mint
