- 55 g young leeks, (or substitute spring onions), finely chopped
- 1 tbsp snipped chives
- 1/2 tsp dried thyme
- pinches English mustard powder
- sea salt and freshly ground black pepper
- 2 egg yolks
- 1 egg, beaten
- 3 tbsp sunflower oil
