Spring Frittata

Ingredients

  • 2 tablespoons butter
  • 1 cup chopped onion or leek (white and pale green parts only)
  • 1/2 cup diced sweet red pepper
  • 1 bunch thin asparagus, trimmed, cut on the diagonal into 1-inch pieces
  • 1 cup sliced, stemmed shiitake mushrooms
  • 1 cup freshly shelled peas (see Cook's Note above)
  • 2 links chicken-apple sausage, sliced
  • 3 ounces diced cream cheese or farmer's cheese
  • 1 cup diced fontina or grated pecorino
  • 16 eggs, beaten
  • 1 teaspoon salt
  • Freshly ground pepper to taste
  • 1/4 cup freshly grated Parmesan

    Frittata, Literally A Fried Omelet, Could Be Cooked At Home On Top Of The Stove In A Skillet. Traditionally, It's Left In The Pan Until Nearly Done, Then Flipped Over And Cooked Some More — Harsh Treatment For A Delicate Egg Mixture.
