Lentil, Lemon And Parsley Salad

Ingredients

  • 500g small green lentils 
  • 80g flat leaf parsley, chopped
  • 1 carrot, coarsely grated
  • 2 stalks celery, coarsely grated
  • 1 onion, finely minced
  • 1 tomato, chopped 70g rocket (also called arugula)
  • 200g feta cheese, crumbled
  • 10-15 caperberries (or capers if you can't find caperberries)
  • a handful of pitted dry black olives
  • 250ml olive oil (it's a lot of salad!)
  • juice of 4 lemons
  • 4 or more cloves of garlic, crushed
  • dash of wine vinegar
