- 500g small green lentils
- 80g flat leaf parsley, chopped
- 1 carrot, coarsely grated
- 2 stalks celery, coarsely grated
- 1 onion, finely minced
- 1 tomato, chopped 70g rocket (also called arugula)
- 200g feta cheese, crumbled
- 10-15 caperberries (or capers if you can't find caperberries)
- a handful of pitted dry black olives
- 250ml olive oil (it's a lot of salad!)
- juice of 4 lemons
- 4 or more cloves of garlic, crushed
- dash of wine vinegar
