Raspberry Ruffle Cake

Ingredients

  • 2, 8 inch sandwich tins, greased and lined at the bottom
  • 8oz/225 g butter
  • 8oz/225g caster sugar
  •  8oz/225g Self raising flour
  • 4 eggs
  • 2oz/50g cocoa powder
  • 1 dessert spoon buttermilk or sour cream
  • 1 dessert spoon golden syrup
  • 1 tsp vanilla extract

for the filling and the top:

  • 3oz/75g raspberries
  • 1lb/45g icing sugar (you may need more or less of this depends how juicy your raspberries are)
  • 5oz/150g desiccated coconut
  • 1/2 teaspoon vanilla extract
  • 250g dark chocolate
  • small tub of double cream
