Jalapeno Corn Pones W/ Citrus Walnut Sauce

Ingredients

For Jalapeno Corn Pones:
3 Whole eggs plus 2 egg yolks, reserve whites
1 1/2 cups Corn kernels
2 tbsp Chopped jalapeno, seeded and stemmed
1/2 bunch Green onions, cropped and chopped
1/4 cup Chopped fresh cilantro
1 cup Buttermilk
1 tsp Each, salt and pepper
2 tsp Sugar
1 3/4 cup Flour
2 tsp Baking powder
1 tsp Dried mustard
Butter for frying
For Citrus Walnut Sauce:
1 Shallot, chopped
Juice and zest from 2 Meyer lemons
2 cloves Garlic, minced
1 tsp Fresh thyme, chopped
1/2 cup Walnuts, toasted and chopped
3 tbsp Maple syrup
4 tbsp White balsamic vinegar
1/2 cup Walnut oil
1/4 cup Extra virgin olive oil
1/2 tsp Each, salt and pepper
