Shitake Mushroom-organic Barley Risotto

Ingredients

1 cup Organic whole barley
1/2 cup Organic short grain brown rice
2 tbsp. Cold-pressed sunflower oil (or olive oil)
2 cups Fresh shitake mushrooms, stemmed and sliced
1 cup Crimini, or any button mushrooms, sliced
1 Medium onion, diced
2 cloves Garlic, crushed with the side of a knife
1/2 tsp Ginger root, grated, or 1/4 tsp. powdered
2 tsp. Fresh sage, finely chopped
1 tsp. Fresh marjoram, finely chopped
3 cups Vegetable stock
1/8 tsp. Cayenne pepper
1/2 Medium acorn squash
1 tbsp. Ghee (clarified butter)
1 tbsp. Maple syrup
1/8 tsp. Cinnamon
1/4 cup Flat-leaf parsley, chopped fresh
1/4 cup Pecans, toasted and coarsely chopped
To taste sea salt & freshly ground black pepper
