5 Medium potatoes, peeled and cubed

1 c. Finely chopped onions
2 Med. carrots, peeled and finely chopped
1/2 c. Frozen peas
1 tblsp. Ground cumin
1 tblsp. Coriander
1/2 tsp. Turmeric
Pinch cayenne
1 10 oz. Box frozen spinach
1/2 tsp. Salt
1/2 c. Dry bread crumbs, plus more to roll balls in
Vegetable oil, for frying
Cooked rice
Kofta Curry Sauce
3 tblsp. Olive oil
1 c. Finely chopped onions
2 Small bay leaves
4 tsp. Coriander
1 tblsp. Ground cumin
2-3 tblsp. Minced fresh ginger or 1 tsp. dried
1/2 tsp. Ground cardamon
1/2 tsp. Mild chili powder
1/4 tsp. Ground cinnamon
Pinch of cayenne
1 28 oz. Can crushed tomatoes in puree
1/2 tsp. Salt
2 c. Plain yogurt or unsweetened soy milk
