1-2 Chipotle chilies in Adobo sauce, processed until smooth
¦Cuban Roast Pork:
1 6-8 lb. Pork loin or shoulder, boned
1/2 c. Freshly squeezed lime juice
1/2 c. Freshly squeezed orange juice or grapefruit juice
1 Large green bell pepper, coarsely chopped
1 Large onion, coarsely chopped
¦Spice Rub for Pork:
2 tbs. Paprika
1 tbs. Garlic powder
1 tbs. Onion powder
1 tbs. Thyme, dried, crushed
1 tbs. Kosher salt
1 tbs. Freshly ground pepper
1 tsp. Ground cumin
1/2 tsp. Ground allspice
1/2 tsp. Ground ginger
1/2 tsp. Ground cinnamon
1/2 tsp. Cayenne pepper, ground
