Ingredients

8 oz. Uncooked rice noodles
2 tsp. Peanut oil
2 Medium cloves garlic, minced
1 Medium red bell pepper, julienned
2 Ripe large tomatoes, seeded and diced
4 oz. Snow peas, strings removed
4 oz. Firm tofu, drained well and cut into 1/4-inch-thick matchsticks
1/4 cup Low-sodium soy sauce
2 tbs. Fresh lime juice
2 tbs. Chopped fresh cilantro
1/4 cup Chopped cashews (1 oz.)
4 Scallions (white and light green parts), chopped
2 oz. Fresh bean sprouts (1 cup)
