1 1/4 cups Dried adzuki bean, small red beans, or black beans picked over and rinsed
1/4 teaspoon Freshly ground black pepper
2 tablespoons Mellow white miso
3 tablespoons Orange juice
2 tablespoons Lemon juice
2 tablespoons Olive oil
1/2 teaspoon Grated fresh ginger
3 Scallions, diagonally sliced
2 Medium cucumbers, peeled, halved, seeded, and cut into thin diagonal slices
1 Small carrot, shredded
1/4 cup Walnuts, coarsely chopped
