- Peanut or canola oil for frying
- 1 head Napa cabbage
- 1 head romaine lettuce (or 1 bunch kale)
- 4 green onions (scallions), finely chopped
- 3 carrots cut into matchstick-size pieces
- 1/2 cup finely chopped fresh cilantro
- 1/2 cup sliced almonds
- 1 small can Mandarin orange slices, drained
- For the dressing:
- 1/4 cup soy sauce
- 1/4 cup freshly squeezed lemon juice (about 2 small lemons)
- 2 tablespoons sugar (or to taste)
- 1 tablespoon rice wine vinegar
- 1 clove garlic, pressed through a garlic press
- 2 teaspoons peeled and grated fresh ginger
- 1 tablespoon Asian sesame oil
- 1/4 cup vegetable oil
