Fast Fish Stock Recipe

Ingredients

  • 2 tablespoons of unsalted butter
  • 1 lb. of bones and trimmings from any white fish/such as sole, flounder, whiting, including the heads, skin, bones with flesh.
  • 1 onion sliced
  • 1 celery stalk, cut in one inch pieces including the leaves
  • 6 sprigs of flat leaf parsley
  • 1 carrot cut in chunks
  • 2 tablespoons of lemon juice
  • 1 bay leave
  • 1 large sprig of dill
  • 1/2 teaspoon of salt
  • 4 cups of cold water (more as needed)
  • 1 cup of dry white wine
