Ingredients
- 10 ounces farro - about 1 1/2 cups
- 1 1/2 tsp kosher salt plus 1/2 tsp salt
- 1/2 cup pitted green olives (can sub Greek olives - yummy)
- 1 medium red pepper, cut into chunks (about 1 cup)
- 1/2 english cucumber, sliced 1/4" and quartered
- Several tomatoes, cut in half and then sliced
- 1 avocado, diced
- 1 red onion, sliced in half and then cut in half and then on the diagonal
- capers to taste
- feta cheese to taste
- 1 lemon
- olive oil
- salt and pepper to taste
- fresh basil torn into small pieces

I Really Like Farro And Have Several Recipes Here For Salads Made With It. One Day I Didn't Have Many Of The Ingredients So I Made Up My Own Recipe.
