Classic Carbonnades A La Flamande Recipe Recipe

Ingredients

  • 1 lb (450g) stewing beef
  • 1 lb (450g) shallots (Peeled but left whole)
  • 1 tbsp butter
  • olive oil
  • 2 garlic cloves (Crushed)
  • 1/4 Pint (150ml) vegetable stock (I make my own veg stock with all the trimmings, that I collect-mushroom stems especially and celery leaves, carrots, onions,)
  • 1/2 Pint (300ml) Good Quality Belgium beer or English ale
  • 1 tbsp brown sugar
  • 1 bouquet garni (or thyme, Bay Leaf & parsley)
  • 1 tbsp cornflour
  • 1 tbsp white wine vinegar (I use two tbsp of sherry vinegar now)
  • French Stick + French Dijon mustard

Description

Beef & Onions Brasied In Beer Belgium Style, Inspired By Julia Child-Never On The Menu At Rollande Et Pierre, But Taught In Class At The Stock Pot. My Effort Was Graded A B- In 1976, Today It Is An A+ From The Family.
