French Roasted Onion Soup With Thyme Recipe

Ingredients

  • 4 or 5 large Spanish onions (yellow onions) cut lengthwise into thin strips (about 8 cups)
  • 8 garlic cloves, minced or pressed
  • 1-2 t salt
  • 2 T olive oil
  • 4 bay leaves
  • 3 t dried thyme
  • about 2/3 cup dry white wine
  • 8 cups vegetable stock (of course homemade is best, but any will do!)
  • 2 T tamari or soy sauce
  • salt and ground black pepper to taste
  • Optional topping: grated gruyere or swiss cheese and herbed croûtons
