Ingredients
- Aioli:
- 1 large egg
- 1/2 corn oil
- 3 tablespoons Dijon mustard
- 1 clove garlic
- 1 tablespoon white wine vinegar

- caramelized onion Tarts:
- 1/2 sheet puff pastry (I have a recipe for homemade posted here)
- 2 tablespoons unsalted butter
- 1 large sweet onion, peeled and thinly sliced
- 1 teaspoon sugar
- splash of balsamic vinegar
- 1 teaspoon chopped fresh thyme
- kosher salt & fresh ground black pepper, to taste

- Greens:
- 2 handfuls of baby romaine
- splash of aged balsamic vinegar
- splash of extra virgin olive oil
- fresh ground black pepper

- 2 (8 oz) filets mignons, 11/2 inches thick
- kosher salt
- garnish: chopped Italian parsley
