Easy Red Flannel Hash Recipe

Ingredients

  • 2 tablespoons minced onions
  • 2 cups diced boiled potatoes
  • 1 (14 ounce) can corn beef hash
  • 1 cup chopped cooked beets or diced cooked beets (not pickled, amount of beets to taste)
  • 2 cloves garlic, minced
  • 1/4 cup beef broth
  • 6 poached eggs or fried eggs (one egg per serving)
  • 2 tablespoons grated parmesan cheese
  • 1 tablespoon chopped parsley
