Chickpea Salad Recipe

Ingredients

  • 1 can chickpeas, drained & rinsed
  • 1-2 tomatoes, cubed
  • 1 small red onion, sliced/chopped
  • 1 sweet pepper (red, orange, yellow), chopped
  • Other veggie suggestions (use any or all):
  • broccoli, corn, cucumbers, celery, baby spinach, zucchini, carrots, beets, mushrooms

  • Dressing (this is what makes it SOOO tasty!!):
  • 2 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar
  • 1 tbsp lemon juice
  • 1-2 cloves garlic, crushed (add more for extra garlickyness)
  • 1 tbsp ground flax seed
  • 1 tbsp basil
