- 1 Tbs oil
- 1 onion, sliced
- 1 large carrot, cut into finger-length chunks
- 3 celery stalks, sliced
- 1 1/4 cups good chicken stock
- juice of 1/2 a lemon
- 3 oz. white wine
- salt and freshly ground pepper

- 3 Tbsp butter
- 6 Tbsp all-purpose flour
- 2 egg yolks
- 2/3 cup heavy cream
- Grated zest of 1 lemon
- 1 1/4 cup sliced mushrooms, sauteed in butter
- Fresh cilantro, chopped
- salt and freshly ground pepper
- lemon juice (optional)
