- 6 1-inch-thick slices of brioche Simple Brioche Loaf or challah, cut into cubes

- 3/4 cup plus 2 tablespoons granulated sugar
- 1/4 cup plus 2 tablespoons light corn syrup
- 1/4 cup water
- 1 1/2 cups heavy cream, warmed
- 2 tablespoons unsalted butter, at room temperature
- pinch of fleur de sel
