- 1/2 c tomato, chopped
- 1/2 c cucumber, peeled, seeded, and chopped
- 1/2 c sweet onion, chopped
- 1/2 c red bell pepper, chopped
- 1 tb lime juice
- 4 tb fresh cilantro, chopped
- 1 - 2 tsp red pepper flakes
- salt and pepper to taste
- cooked white rice
