Baked Oatmeal Carrot Cake Version Recipe

Ingredients

  • 2 cups uncooked oatmeal (not instant)
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup fat-free skim milk
  • 1/2 cup Egg Beaters or 2 eggs, beaten
  • 1/2 cup unsweetened applesauce
  • 1/4 cup sugar (I use just a pinch, you can always add sugar to the cooked version-- just sprinkle on top)
  • 1 tsp vanilla extract
  • 1 T. cinnamon
  • 1 cup shredded carrots
  • 1 small can of crushed pineapple, drained
  • ¼ cup raisins
