- 2 1/2 cups sugar
- 2 teaspoons baking powder
- 2 teaspoons baking soda
- 2 teaspoons salt
- 2 teaspoons ground cinnamon
- 1 teaspoon ground ginger
- 1 1/2 cups vegetable oil
- 8 large eggs
- 2 teaspoons vanilla extract
- 1 recipe Ginger Cream-Cheese Icing (Recipe follows.)
- Garnish: carrot rosettes* and fresh mint

Preheat Oven To 350 Degrees. Line The Bottoms Of 3 (9-inch) Cake Pans With Parchment Paper And Spray With Baking Spray With Flour; Set Aside.
