Carrot Cake With Ginger Cream-cheese Icing

Ingredients

  • 8 medium   carrots, peeled and chopped into quarters
  • 1 cup  applesauce
  • 3 cups  all-purpose flour
  • 2 1/2 cups  sugar
  • 2 teaspoons   baking powder
  • 2 teaspoons   baking soda
  • 2 teaspoons   salt
  • 2 teaspoons   ground cinnamon
  • 1 teaspoon  ground ginger
  • 1 1/2 cups   vegetable oil
  • 8 large   eggs
  • 2 teaspoons   vanilla extract
  • 1 recipe  Ginger Cream-Cheese Icing (Recipe follows.)
  • Garnish:   carrot rosettes* and fresh mint

Description

Preheat Oven To 350 Degrees. Line The Bottoms Of 3 (9-inch) Cake Pans With Parchment Paper And Spray With Baking Spray With Flour; Set Aside.
