- 8 lasagna noodles, cooked el dente
- 2 Italian sausages, casings removed and cooked breaking up until no longer pink
- 1 small eggplant
- olive oil
- 1 small container ricotta cheese
- 1 8 oz. block mozzarella cheese, grated
- 1 egg
- parsley, enough for cheese mixture...I just eyed it
- salt and pepper to taste
- 1 cup Italian blend cheese, shredded
- Your favorite marinara sauce

I Saw A Little Blurb On Food Network With Hungry Girl Saying In Order To Save Calories In Lasagna, Use Eggplant As A Layer Of Noodles...It Sounded Good To Me So I Gave It A Go....Let Me Tell You, This Lasagna Is NOT Diet Friendly But It Does Have Eggplant
