- 1 lb carrots, sliced diagonally into 1 inch chunks
- 2 yellow onions, sliced
- 2 tsp chopped garlic
- ½ c cognac
- 1 (750 ml) bottle good dry red wine such as Pinot Noir
- 1 c (2 cups) beef broth
- 1 tbsp tomato paste
- 1 tsp fresh thyme leaves (1/2 tsp dried)
- 4 tbsp unsalted butter at room temperature, divided
- 3 tbsp all purpose flour
- 1 lb frozen whole onions
- 1 lb fresh mushrooms, stems discarded, caps thickly sliced
- For serving:
- bread or egg noodles
