  • ½ cup sugar
  • 2 eggs
  • 3 cups flour
  • 2 cups whole wheat pastry flour
  • 1 teaspoon salt
  • ¾ cup pineapple jam or preserves
  • 1 ¼ cups Splenda Granulated (or sugar)
  • ¼ cup cornstarch
  • 2 tablespoons hot water
  • 1 teaspoon coconut extract
  • 1/2 cup toasted unsweetened shredded coconut
